Vinification
A Chardonnay from the L'Étoile appellation, one of the lesser-known subregions of the Jura, is made without oxidative techniques — in a fresher, more pure style. Ageing takes place partly in oak barrels, lending the wine a light creamy texture while preserving its bright acidity. The 'En Novalet' cuvée reflects the specific limestone soils of the plot.
Winery Story
Domaine Rolet is one of the largest and most respected estates in the Jura, founded in 1942 by the Rolet family. The domaine owns vineyards in several appellations of the region, including Arbois, L'Étoile and Côtes du Jura. The family consistently keeps to traditional Jura winemaking methods, carefully preserving the local varieties and terroirs.
Vineyard Story
The L'Étoile appellation lies in the southern part of the Jura and is distinguished by soils with a high content of blue clays and limestone, lending the local Chardonnays a pronounced minerality and salinity. The 'En Novalet' plot is a separate climatic pocket with good sun exposure and moderate drainage, yielding ripe yet fresh grapes. The altitude of the vineyards and the continental Jura climate ensure the preservation of natural acidity.
