Sauvignon from Kabaj in Goriška Brda is fermented and aged in oak barrels, giving the wine roundness and depth while preserving varietal expressiveness. The vineyards lie on limestone-flysch soils that shape its characteristic minerality. The style aims at complexity and ageing potential rather than a simple aromatic profile.
Winery Story
Kabaj is a family winery in Slovenia's Goriška Brda, run by French-born winemaker Jean-Michel Morel and his wife Katja Kabaj. The estate is known for its skin-macerated whites — partly fermented in buried qvevri — and patient, traditional reds released only when ready.
Vineyard Story
Kabaj's vineyards lie on the slopes of Goriška Brda — one of Slovenia's finest wine regions, with a mild Mediterranean climate. The soils are the characteristic flysch — alternating layers of limestone and sandstone — providing excellent drainage and lending the wines pronounced minerality. Proximity to the Adriatic and the shelter of the Alps create a unique microclimate for ripening Sauvignon.
