Vinification
Kiddo Blanc is a sparkling wine made by the ancestral method (pét-nat): fermentation begins in tank and finishes in bottle, with no added yeasts or sugar. Milan Nestarec works with no added sulfur — or only the smallest of doses — keeping the wine's living, direct character intact. The style is light, fresh, with naturally retained CO₂.
Winery Story
Milan Nestarec is one of the best-known natural winemakers in the Czech Republic, working in Moravia. He began his shift to natural winemaking in the mid-2000s, gradually phasing out chemical interventions and sulfur in favour of a living, expressive style. His wines stand out for their vivid personality and playful labels that reflect his unconventional approach to winemaking.
Vineyard Story
Nestarec's vineyards lie in South Moravia, in a region with a moderate continental climate and varied soils — from loess to limestone. Sauvignon Blanc here opens up with fresh herbal and citrus notes and a pronounced minerality, shaped by Moravia's frosty nights and warm days. Biodynamic practices help preserve the vitality of soil and vine.
