Vinification
The wine macerates on the skins for an extended period, giving it its characteristic amber hue and tannic structure. Paraschos works with biodynamic farming and minimal intervention — no added sulfur. Fermentation and ageing take place in amphorae or large wooden vessels, preserving the wine's living nature.
Winery Story
Paraschos is a small family estate in Collio, Friuli, founded by Evangelos Paraschos of Greek origin. The estate works on biodynamic and natural-winemaking principles, avoiding any technological intervention. Paraschos wines are considered a benchmark of the natural style in the region and are celebrated by orange-wine enthusiasts around the world.
Vineyard Story
The vineyards lie in the Collio subzone on the border between Italy and Slovenia, on hilly soils of marl and sandstone — the local soil type known as 'ponca'. This unique terroir gives the fruit high minerality and bright acidity. Ribolla Gialla, Friulano and Malvasia are the region's native grapes, cultivated here for centuries.
