Vinification
Schilcher Frizzante is made by the ancestral method (pétillant naturel) from the autochthonous Blauer Wildbacher grape, found almost exclusively in Western Styria. Fermentation finishes in bottle on residual sugars with no dosage liqueur added, yielding a lively, slightly cloudy sparkler made with minimal intervention. Strohmeier works biodynamically, using no sulfites or only the smallest of additions.
Winery Story
Styrian estate Strohmeier, led by Franz Strohmeier, is one of the pioneers of natural winemaking in Austria. The estate is run strictly along biodynamic principles, certified Demeter, with no synthetic inputs in vineyard or cellar. Strohmeier is known for its consistent work with local varieties, above all Blauer Wildbacher — the backbone of the legendary Schilcher.
Vineyard Story
The vineyards lie in Western Styria (Weststeiermark) — the only region in the world where Blauer Wildbacher is traditionally cultivated. Steep slopes at 400–500 metres above sea level, with soils of slate, gneiss and tuff, deliver high natural acidity and bright minerality in the fruit. A cool continental-Mediterranean climate ensures slow ripening and preserves the variety's freshness and aromatics.
