Vinification
The cuvée is made in a natural style with minimal intervention: wild-yeast fermentation, with no added sulfur or only the smallest of doses. Xinomavro (literally 'sour black') shows its characteristic high acidity and structure in a light, drinkable format with lower alcohol. The aim is to convey the pure terroir of Naoussa without heavy extraction.
Winery Story
Apostolos Thymiopoulos is one of Greece's best-known young winemakers, focused on reviving the Xinomavro variety in the Naoussa region. His Thymiopoulos Vineyards estate has become a symbol of a new generation of Greek winemaking, combining respect for tradition with a modern, natural approach. Apostolos works with high-altitude vineyards and places an emphasis on terroir expression.
Vineyard Story
The vineyards lie in the Naoussa area of Central Macedonia — Greece's key appellation for Xinomavro. High-altitude sites provide significant diurnal temperature swings that preserve the grape's natural acidity and give the wine freshness. The soils are mainly clay-limestone, adding a characteristic minerality.
