Vinification
Olla Blanc is a light white wine from Tom Lubbe of Matassa, a winery built on a natural approach. Muscat à Petits Grains and Macabeu are picked by hand on the limestone-schist soils of the Roussillon, fermented with minimal intervention and a small dose of sulfites. The style highlights freshness, aromatics and the directness of the varieties.
Winery Story
Matassa is the project of New Zealand-born, South Africa-raised Tom Lubbe, who settled in Roussillon in the early 2000s. Tom works along organic and biodynamic lines, making wines with minimal cellar intervention. Matassa has become one of the symbols of natural winemaking in southern France.
Vineyard Story
Matassa's vineyards lie around the village of Calce-de-Maury at about 400 metres above sea level. The soils are mainly schist and limestone, lending the wines a characteristic minerality and freshness. The average age of the vines is high, providing concentration at moderate yields.
