Vinification
The Les Lèches cuvée is a natural white wine from Gérald Oustric (Le Mazel) in the Ardèche. The grapes ferment spontaneously on wild yeasts, with no temperature control and minimal cellar intervention. SO₂ additions are kept to a minimum or skipped entirely, and the wine is bottled unfiltered.
Winery Story
Le Mazel is the estate of Gérald and Jocelyne Oustric in the Ardèche, a cult name in the French natural-wine movement. Gérald works the vineyards without herbicides or pesticides, following principles of respect for the land and minimal intervention. Their wines have become a benchmark for honest, terroir-driven winemaking in the southern Rhône.
Vineyard Story
Le Mazel's vineyards lie on the limestone and schist soils of the granite plateau of the Ardèche at 400–500 m above sea level. The Les Lèches plot is marked by a stony, well-drained terroir that gives the wines their characteristic minerality and freshness. The high-altitude location ensures cool nights, preserving the fruit's natural acidity.
