Vinification

Cava is made by the traditional method (méthode traditionelle) with a second fermentation in bottle. The Brut Nature style means no dosage — residual sugar under 3 g/L, giving the wine an utterly dry and clean character. The classic Catalan blend of three varieties balances freshness, body and aromatic complexity.

Winery Story

Azimut is a Catalan winery focused on producing Cava in the Penedès region. The project is geared towards approachable yet precise Brut-style sparklers, with an emphasis on purity and varietal character.

Vineyard Story

The vineyards lie in Penedès — the heart of Cava production in Catalonia — on limestone soils at 200–400 metres above sea level. A Mediterranean climate with cool nights preserves the natural acidity of Macabeu, Xarello and Parellada. The terroir gives the wine the fresh citrus and mineral notes typical of classic Cava.
