Vinification
Canalicchio di Sopra's Brunello di Montalcino is made from the Sangiovese Grosso (Brunello) clone, fermented in large oak casks — the traditional Slavonian botti — with extended maceration. Ageing takes place in large oak casks for at least three years, followed by additional bottle ageing, which gives the wine its classic austerity and capacity for long cellaring.
Winery Story
Canalicchio di Sopra is a family estate in Montalcino founded by Primo Pacenti in 1962, one of the twelve founding members of the Brunello consorzio. Today it is run by the founder's grandchildren — Francesco, Marco and Simonetta Ripaccioli — keeping to the traditional style of large Slavonian casks and minimal intervention.
Vineyard Story
The vineyards lie in the northern part of Montalcino, at around 350 metres above sea level, on soils rich in galestro and tufa. The northern exposure delivers a cooler microclimate and slower ripening, encouraging the high acidity and refined tannic structure that are hallmarks of the estate.
