Vinification
Hefeabzug ('drawn off the lees') is a Nikolaihof cuvée aged on fine lees with no filtration or fining. The Demeter-biodynamic winemaking with minimal intervention preserves the living texture and native character of Grüner Veltliner from the Wachau.
Winery Story
Nikolaihof is Austria's oldest biodynamic winery and one of the country's pioneers of Demeter certification, based in Mautern in the Wachau. The Saahs family runs the estate, whose history reaches back to Roman times, following Rudolf Steiner's principles since 1971. Their philosophy is non-intervention and respect for the living vine as part of a holistic farm.
Vineyard Story
Nikolaihof's vineyards lie on the steep loess and primary-rock terraces of the Wachau along the Danube, with a unique microclimate of warm Pannonian air masses moderated by Alpine coolness. Soils of gneiss and amphibolite give the wines their characteristic minerality and steady acidity. The vines are tended strictly biodynamically, without synthetic fertilisers or pesticides.
