Vinification
Federspiel is the traditional Wachau category for lighter wines up to 11.5% alcohol; the Late Release version from Nikolaihof, however, is aged significantly longer before release, giving the wine additional depth and complexity. Nikolaihof's winemaking adheres strictly to Demeter biodynamic principles, with minimal intervention through fermentation and ageing. The result is a Riesling with pronounced minerality, refreshing acidity and a fine fruit profile.
Winery Story
Nikolaihof is one of Austria's oldest wineries, with a history reaching back to Roman times. The Saahs family has run the estate since 1894 and was the first in Austria to gain Demeter biodynamic certification. The winery is considered a benchmark for traditional Wachau winemaking and produces wines built to age.
Vineyard Story
Nikolaihof's vineyards lie on the steep terraced slopes of the Wachau along the Danube, where crystalline gneiss and granite soils provide the characteristic minerality and structure. A unique valley microclimate with warm days and cool nights supports slow ripening and the preservation of high natural acidity. Old Riesling vines reach deep into the stony soil, drawing nourishment and expressing the true character of the Wachau terroir.
