Vinification
Paraschos makes wines in a natural style with minimal intervention, using spontaneous fermentation and ageing without added sulfites or with only minimal amounts. Merlot is fermented on the skins followed by ageing in amphorae or wood to preserve the terroir's liveliness. The style underscores the authenticity of the Friulian terroir, avoiding technological manipulation.
Winery Story
Paraschos is a small family estate in Gorizia (Friuli), founded by Evangelos Paraschos, of Greek origin and in love with Friulian terroirs. The winery works on natural-winemaking principles, with a complete refusal of chemistry in vineyard and cellar. The estate has won respect among natural-wine lovers for its honest expression of place.
Vineyard Story
The vineyards lie on the limestone-clay soils of the Gorizia hills near the Slovenian border — one of the cooler and more mineral subregions of Friuli. A moderate climate with Alpine influence ensures slow ripening and the preservation of natural acidity. Biodynamic farming lets the soil and the vines express the authentic character of the terroir.
