Vinification
Paraschos's JZB cuvée is a natural Sauvignon Blanc aged on the skins for texture and depth. The winemaking is hands-off, with no filtration and very low or no sulfur additions. The style favours terroir expressiveness and complexity over varietal typicity.
Winery Story
Paraschos is a small Greek-origin family estate based in the Colli Orientali del Friuli. Evangelos Paraschos is one of the pioneers of natural winemaking in Italy, working biodynamically since the late 1990s. His wines stand out for a philosophy of non-intervention and a deep bond with the local terroir.
Vineyard Story
The vineyards lie in the hills of Friuli-Venezia Giulia, where ponca soils dominate — a characteristic mix of limestone and marl that lends minerality and freshness. A microclimate shaped by both the Adriatic and the Alps ensures a good diurnal temperature range, preserving acidity. The vineyards are tended by hand with no synthetic inputs.
