Vinification
Cielo d'Ulisse from Podere Le Ripi is a biodynamic Sangiovese cuvée aged in amphorae without added sulfur. The winery follows Demeter and natural-winemaking principles, intervening minimally in the process. The wine stands out for lively acidity and the purity of the Brunello di Montalcino terroir.
Winery Story
Podere Le Ripi sits in Montalcino and belongs to Francesco Illy — one of the most consistent advocates of biodynamics in Tuscany. The estate is Demeter-certified and works without synthetic additives in winemaking. Le Ripi's philosophy is to make wines as honest and alive as possible, reflecting the specific year and place.
Vineyard Story
Podere Le Ripi's vineyards lie at around 350 metres on the hills of Montalcino on galestro and alberese soils — classic for the zone. Sangiovese here gains depth and structure thanks to the substantial diurnal temperature swings and the lean, stony soils. Biodynamic farming ensures the vines' health without chemical interventions.
