Vinification
A light Burgundian Pinot Noir, vinified to preserve freshness and a delicate fruit expression. Partial or full whole-cluster fermentation is used to add floral and spicy notes. Ageing takes place in neutral vessels or old barrels to preserve the purity of the terroir.
Winery Story
Theo Dancer is a small Burgundian producer working in the traditions of respectful winemaking with an emphasis on terroir expression. The estate keeps to ecologically responsible vineyard practices, aiming to convey the authentic character of Burgundian soils.
Vineyard Story
Roc Breia is a cuvée from plots on Burgundy's limestone-clay soils typical of the region. The moderate climate and altitude favour the preservation of high acidity and aromatic freshness in the fruit.
