Vinification
Cuvée Initiation is made mainly from Pinot Meunier with an addition of Pinot Noir by the traditional Champagne method. Benoît Déhu is a récoltant-vinifier working with minimal intervention, with no or very low sulfur. Dosage is generally minimal, highlighting the purity and freshness of the terroir.
Winery Story
Benoît Déhu is an independent grower from Mareuil-sur-Aÿ working along organic and biodynamic lines. His estate is marked by a minimalist approach: no herbicides, all hand work in the vineyard, and very low sulfur levels in the wines. Déhu is one of the most distinctive voices of the new generation of Champagne producers focused on terroir expression.
Vineyard Story
Déhu's vineyards lie at the heart of the Vallée de la Marne — a zone traditionally known for the dominance of Pinot Meunier. Chalk and clay-limestone soils give the wines their characteristic minerality and freshness. The proximity of the Marne river creates a gentle microclimate that supports slow, even ripening of the fruit.
