Vinification
Grapes from the Les Vaillons premier cru climat on the left bank of the Serein are fermented and aged mainly in old oak barrels, which adds complexity without overshadowing the terroir's minerality. Bernard Defaix follows the traditional Chablis style with ageing on fine lees to enrich texture.
Winery Story
Domaine Bernard Defaix is a family winery in Chablis, founded in the 1960s and today run by the second generation. The estate is known for its respectful relationship with the Chablis terroir and for wines marked by purity, minerality and ageing potential. The Defaix wines are among the appellation's reliable producers, regularly drawing high marks from critics.
Vineyard Story
Les Vaillons is one of the larger and more highly regarded Premier Cru climats of Chablis, on the left bank of the Serein river with a south-westerly exposure. The soils are composed of the famous Kimmeridgian limestone rich in fossilised oysters of the Exogyra virgula species, which shapes the wines' characteristic saline minerality. The 2019 fruit shows excellent ripeness while retaining lively acidity — the hallmark of classic Chablis terroir.
