Vinification
Chardonnay from the Savigny-lès-Beaune appellation undergoes traditional Burgundian vinification with ageing in oak barrels, mostly older ones. The style aims to preserve freshness and express the Côte de Beaune terroir, with gentle barrel influence and malolactic fermentation.
Winery Story
Maison Remoissenet Père & Fils is a historic Burgundian négociant founded in Beaune in 1877. The house is known for its deep cellars holding exceptional archive stocks and a strict approach to selecting wines from the best Burgundian appellations. Today Remoissenet preserves the tradition of classic Burgundian winemaking with particular attention to quality and a mature style.
Vineyard Story
Savigny-lès-Beaune is a small appellation at the heart of the Côte de Beaune, north-west of Beaune itself. The whites here are made on limestone-clay soils that give Chardonnay its characteristic minerality and elegant acidity. The village is surrounded by woodland, creating a cool microclimate that supports freshness and aromatic finesse in the wine.
