Vinification

Éclat de Calcaire is a Burgundian Chardonnay from Pierre Girardin that reflects the limestone terroir of the Côte de Beaune. The winemaking is minimalist, with an emphasis on purity and the expression of the soil; ageing in Burgundian-style barrels with measured new-oak use preserves freshness and minerality.

Winery Story

Pierre Girardin is a young and talented winemaker from Meursault, son of the well-known Burgundian Vincent Girardin, who founded his own estate in 2015. He works in a minimalist style, avoiding excess cellar intervention and aiming for the most precise expression of terroir. His wines quickly earned critical praise as some of the purest, most honest readings of Burgundian Chardonnay.

Vineyard Story

The name 'Éclat de Calcaire' — 'a shard of limestone' — directly references the limestone soils of the Côte de Beaune that lie at the core of this wine's character. The fruit is grown on slopes with calcium-rich chalk soils, which provide the characteristic minerality and refreshing acidity. The wine is conceived as a reflection of the very essence of Burgundian limestone terroir.
