Vinification
Bistrotage is Charles Dufour's range conceived in a bistro spirit: lively, direct sparkling wines made with minimal intervention. B.20 is a base 2020 vintage from Pinot Noir, aged in barrels and tiraged with minimal sulfur additions; dosage is very low or zero, and the wine keeps its natural wildness and the energy of the terroir.
Winery Story
Charles Dufour is one of the most idiosyncratic récoltants-manipulants in Champagne, working in Landreville (Côte des Bar). He practices natural winemaking, foregoes herbicides and pesticides, runs the estate along biodynamic lines and releases small batches with a unique character. His wines are known among lovers of natural Champagne around the world.
Vineyard Story
Dufour's vineyards lie on the chalk soils of the Côte des Bar — the southernmost part of Champagne, where Pinot Noir reaches particular ripeness and fruit density. The unique chalk subsoil gives the wines their characteristic minerality and freshness even in warm vintages.
