Cuvée #13 'Sunday Cuisine' is part of Charles Dufour's 'Bulles de Comptoir' series, conceived as a wine for informal table moments. An assemblage of Pinot Noir, Chardonnay and Pinot Blanc, fermented with native yeasts and minimal intervention. Traditional second fermentation in bottle with low or zero sulfite doses highlights the Champagne's lively, expressive character.
Winery Story
Charles Dufour is an independent grower from Landreville (Côte des Bar) working in the avant-garde of natural Champagne. His approach is built on organic farming, minimal cellar intervention, and either no or very low sulfur additions. The 'Bulles de Comptoir' range embodies Dufour's philosophy: Champagne should be living, approachable and honest.
Vineyard Story
The vineyards lie in the southern part of Champagne — the Côte des Bar, a zone with a more continental climate and chalk soils mixed with limestone. This terroir gives Dufour's wines their characteristic minerality and freshness, setting them apart from the better-known Côte des Blancs or Montagne de Reims. Organic farming preserves the soil's living microbiology, which translates directly into the wines' complexity.
