Vinification
Čotar is one of the pioneers of natural winemaking on the Kras. The fruit is macerated on the skins for a long time, the wine ages in amphorae or old wooden barrels without added sulfur. The style stands out for terroir expressiveness and minimal intervention.
Winery Story
Branko Čotar is a legendary winemaker from the karst Kras plateau in Slovenia, one of the founders of natural winemaking in the region. The estate is run by the family with deep respect for tradition and the natural cycle. Čotar's wines are cult favourites in the natural-wine world and rarely leave the local market.
Vineyard Story
Kras is a harsh karst plateau with characteristic red limestone soils (terra rossa), swept by the bora wind. Extreme conditions yield low harvests and concentrated fruit with pronounced minerality. Cabernet Sauvignon here takes on an atypical terroir character — less fruity, more earthy and structured.
