Vinification
A Grand Cru Blanc de Blancs from the village of Cramant, vinified exclusively from Chardonnay grown on the chalk soils of the Côte des Blancs. Fermentation and ageing follow a minimal-intervention approach, with dosage held very low to preserve the purity of the terroir. The wine shows freshness, precision and pronounced chalky minerality.
Winery Story
Dhondt-Grellet is a small récoltant-Champagne family estate in the village of Flavigny, working in a biodynamic spirit and focused on expressing the terroir of the Côte des Blancs. The winemakers aim for minimal cellar intervention and a precise transmission of the chalky vineyards' character. The estate ranks among the most respected small producers in Champagne.
Vineyard Story
The vineyards lie in the Grand Cru of Cramant — one of the most prestigious villages of the Côte des Blancs, known for deep chalk soils that give wines exceptional minerality and vertical drive. The east and south-east exposure of the hills ensures ideal ripening of Chardonnay while preserving high acidity. A chalk subsoil layer retains moisture and creates a unique microclimate for the vines.
