Vinification
An assemblage of Chardonnay, Pinot Noir and Pinot Meunier in an extra-brut style with minimal dosage that highlights natural acidity and terroir-driven minerality. Traditional-method ageing on lees gives the wine depth and autolytic complexity. Dhondt-Grellet works with low SO₂, preserving the cuvée's vivacity and freshness.
Winery Story
Dhondt-Grellet is a small family estate in the village of Flavigny on the Côte des Blancs, run by Adrien Dhondt — one of Champagne's most exciting young growers. It works as a récoltant-manipulant, with careful farming and minimal cellar intervention.
Vineyard Story
The vineyards lie on the chalk and clay-limestone soils of the Côte des Blancs and the Marne valley, which give the wines their characteristic chalky minerality and freshness. Biodynamic farming preserves the living ecosystem of the soil and lets the terroir come through undistorted. The average age of the vines lends concentration and complexity even in multi-vintage assemblages.
