Vinification
A Blanc de Blancs from Chardonnay grown on the chalk soils of the Côte des Blancs. Fermentation and lees ageing take place in barrels and tanks, giving the wine texture and depth while preserving bright acidity. Dosage is minimal, highlighting the cuvée's terroir character.
Winery Story
Dhondt-Grellet is a small family estate in the village of Flavigny on the Côte des Blancs, run by Adrien Dhondt — one of Champagne's most exciting young growers. It works as a récoltant-manipulant, with careful farming and minimal cellar intervention.
Vineyard Story
The Les Terres Fines vineyard sits on the Premier Cru chalk slopes of the Côte des Blancs. Deep chalk provides exceptional drainage and gives the wines their characteristic minerality and salinity. The vines are tended with attention to biodynamic practice, which shows in the liveliness and purity of aroma.
