Vinification
Burgundian Aligoté is traditionally fermented in stainless steel tanks in order to preserve the freshness and purity of the fruit profile. Minimal oak use lets the variety express its characteristic lively acidity and minerality. Didier Amiot's style is focused on drinkability and the expression of Côte de Beaune terroir.
Winery Story
Didier Amiot is a small Burgundian producer from the commune of Chassagne-Montrachet, working in the family winemaking tradition. The domain specialises in the white wines of the Côte de Beaune, with particular attention to a precise expression of the appellation. The wines are marked by a classic Burgundian style with an emphasis on freshness and minerality.
Vineyard Story
The Aligoté vineyards lie on the limestone soils of Burgundy, typical of the Bourgogne Aligoté appellation. A limestone and marl subsoil provides the characteristic chalky minerality and lively acidity. The moderate continental Burgundian climate in 2020 produced a ripe but balanced harvest.
