Vinification
The cuvée is produced from Grand Cru vineyards in Ambonnay and Verzenay, aged in oak barrels (mostly old) for texture without excess wood. Extended lees ageing (typically over five years) builds the wine's deep autolytic character. Dosage is minimal — at brut or extra-brut level — highlighting minerality and freshness.

Egly-Ouriet is a cult récoltant-manipulant in the village of Ambonnay, run by Francis Egly. The estate has built its reputation on an uncompromising approach: biodynamic farming, extended lees ageing and minimal cellar intervention.
