Vinification
Les Prémices is Egly-Ouriet's entry cuvée, aged on the lees for at least 36 months, which brings depth and complexity. Base wines are fermented in oak barrels and dosage is kept minimal in an extra-brut style. The assemblage of Champagne's three classic varieties reflects the character of the village of Ambonnay.
Winery Story
Egly-Ouriet is one of Champagne's most revered récoltant-manipulant houses, based in the Grand Cru village of Ambonnay. Francis Egly is widely considered an icon of grower Champagne, his wines marked by low yields, minimal intervention and extended lees ageing. The house embodies Champagne's shift from industrial production to the highest level of artisan craft.
Vineyard Story
Egly-Ouriet's vineyards lie mainly in Ambonnay — a Grand Cru village on the Montagne de Reims — where Pinot Noir dominates on limestone-chalk soils. Les Prémices uses younger vines compared with the house's prestige cuvées, yet the terroir still delivers pronounced chalky minerality and freshness. Organic farming preserves the soil's vitality and underlines the authenticity of the site.
