Vinification
Étienne Calsac's Blanc de Blancs, made exclusively from Chardonnay from his vineyards in Avize and the surrounding area. Fermentation and ageing take place mainly in barrels with minimal intervention; dosage is very low or zero, highlighting natural acidity and the chalky terroir of the Côte des Blancs.
Winery Story
Étienne Calsac is a young vigneron from Avize who founded his own estate in 2010 after working at several major Champagne houses. He follows organic farming and a minimal-intervention philosophy, aiming to express the unique chalk terroir of his small parcels.
Vineyard Story
The vineyards lie mainly on the Côte des Blancs, in Avize and the neighbouring villages — one of the most celebrated places for Chardonnay in Champagne. Deep chalk soils provide superb drainage and lend the wines their characteristic minerality and piercing acidity.
