Vinification
A Blanc de Noirs from Pinot Noir grown on the Val l'Hermite vineyard in Avize. Fermentation and ageing take place mainly in old barrels with minimal intervention. Dosage is very low; the style is geared towards expressing the terroir and the minerality of the chalk subsoil.
Winery Story
Étienne Calsac is a young winemaker from Avize who founded his estate in 2010 after working at large Champagne houses. His approach focuses on precise expression of individual parcels and minimal cellar intervention. The estate quickly earned a reputation as one of the bright voices of the new generation of récoltants-manipulants.
Vineyard Story
Val l'Hermite is a separate plot in the commune of Avize on the Côte des Blancs, unusually planted with Pinot Noir. The chalk soils of Avize give the wine exceptional minerality and salinity, atypical for a red variety. Mature vines and the slope's aspect ensure even ripening and the preservation of acidity.
