Vinification
Chardonnay from the climatically cool Saint-Romain appellation, Sous la Velle vineyard. Fermentation and ageing in Burgundian oak barrels, usually with a moderate proportion of new oak, to preserve terroir character. The style is geared towards precision and minerality, characteristic of the higher-altitude sites of the Côte de Beaune.
Winery Story
Domaine Henri & Gilles Buisson is a family estate based in Saint-Romain, working in this appellation for several generations. The Buisson brothers maintain a respectful relationship with the terroir and have been gradually moving towards organic farming. Their wines stand out for their authentic Burgundian character, without excessive cellar intervention.
Vineyard Story
The Sous la Velle vineyard sits at around 350–400 metres altitude in the commune of Saint-Romain — one of the highest and coolest appellations in the Côte de Beaune. Limestone soils with rocky outcrops shape the characteristic chalky minerality and lively acidity. The cool microclimate preserves freshness and aromatic elegance even in warm vintages.
