Vinification
The grapes undergo whole-cluster fermentation with elements of carbonic maceration in the Beaujolais tradition. Jean Foillard works with minimal intervention, using only native yeasts and very low SO₂ doses. Ageing takes place in old Burgundian barrels and large foudres.
Winery Story
Jean Foillard is one of the legendary 'Gang of Four' of Beaujolais, pioneers of natural winemaking in the region. His estate in Villié-Morgon became a symbol of a new approach to Gamay that combines tradition and minimal intervention. Foillard is considered a benchmark producer of the Morgon appellation.
Vineyard Story
The vineyards lie on the slopes of Morgon — one of the ten Beaujolais crus, known for its unique soils of decomposed volcanic schist (schiste) and granite. It is precisely this terroir that gives the wine its characteristic depth, minerality and ageing potential, atypical of the region.
