Vinification
Grapes from the volcanic Côte du Py hill are aged with whole-cluster fermentation and semi-intact maceration, characteristic of Jean Foillard's style. The wine matures in old Burgundian barrels without added sulfur or with a minimal amount, preserving a lively fruit character and terroir expressiveness. The cuvée is considered the estate's signature and a benchmark for natural Beaujolais.
Winery Story
Jean Foillard is one of the founders of the 'Gang of Four' in Beaujolais, inspired by the legendary Marcel Lapierre. Since the 1980s he has consistently championed the principles of natural winemaking, working with organically farmed vineyards without chemical inputs. His wines are considered a benchmark for terroir-driven Morgon and enjoy worldwide acclaim among natural-wine lovers.
Vineyard Story
The Côte du Py vineyard lies on a volcanic hill in the Morgon appellation and stands out for its unique soils of decomposed basalt — the so-called 'rotten rock' (schist and gabbro). This terroir gives the wine its characteristic minerality and structure, setting Côte du Py apart from all the Beaujolais crus. The Gamay vines here are old, deeply rooted, providing concentration and complexity.
