Vinification
Fruit from the volcanic schist slopes of the Côte du Py hill goes through whole-cluster semi-carbonic maceration with no added sulfur. Jean Foillard is one of the pioneers of natural winemaking in Beaujolais; his wines ferment on wild yeasts and undergo essentially no intervention. The style stands out for purity, depth and a pronounced terroir of the basalt-schist soils.
Winery Story
Jean Foillard is a legendary figure of Beaujolais, one of the 'Gang of Four' alongside Lapierre, Breton and Thévenet, who reinvented the region in the 1980s. His estate in Morgon works along organic and natural-winemaking lines with minimal intervention. Foillard's wines are considered a benchmark of authentic Gamay and are highly prized by collectors around the world.
Vineyard Story
Côte du Py is the most famous vineyard of the Morgon appellation, on the steep slopes of an ancient volcanic hill. The soils consist of weathered basalt, blue schists and the so-called 'roche pourrie' — decomposed crystalline schist that gives the wines their characteristic minerality and depth. Vines aged 40–80 years yield small crops of concentrated, complex fruit.
