Vinification
Beli Pinot from Kabaj is a classic Pinot Blanc from Goriška Brda, with winemaking focused on terroir and minimal intervention. The wine undergoes partial or full ageing in wooden barrels, which adds structure and a creamy texture. Kabaj's style is built on native-yeast fermentations and a respectful approach to the variety.
Winery Story
Kabaj is a family winery in Slovenia's Goriška Brda, run by French-born winemaker Jean-Michel Morel and his wife Katja Kabaj. The estate is known for its skin-macerated whites — partly fermented in buried qvevri — and patient, traditional reds released only when ready.
Vineyard Story
Goriška Brda is a Slovenian region on the border with Italian Friuli, known for its mild sub-Mediterranean climate and soils based on limestone and flysch rocks ('opoka'). Kabaj's vineyards lie on well-drained terraced slopes that favour aromatic concentration and high natural acidity. The terroir gives the wines a characteristic minerality and freshness.
