Vinification
Sivi Pinot from Kabaj is a structured, mature Pinot Gris from Goriška Brda, made with skin maceration that gives the wine its characteristic texture and depth. Oak-barrel ageing adds complexity and roundness. The style reflects Kabaj's traditional approach to white wines — rich, aromatic and built to age.
Winery Story
Kabaj is a family winery in Slovenia's Goriška Brda, run by French-born winemaker Jean-Michel Morel and his wife Katja Kabaj. The estate is known for its skin-macerated whites — partly fermented in buried qvevri — and patient, traditional reds released only when ready.
Vineyard Story
Goriška Brda is one of Slovenia's most prestigious wine areas, bordering Italian Collio. Terraced vineyards on chalky and limestone soils (ponca) provide minerality and freshness. A Mediterranean climate with a moderate Alpine influence creates ideal conditions for ripening aromatic white varieties.
