Vinification
Cuvée 'Not' from Paraschos is a Pinot Grigio with extended skin maceration, giving the wine its characteristic amber colour and structure. The winemaking is done without added sulfur and with minimal intervention, in the spirit of the Friulian natural school. The wine is aged in neutral vessels, preserving its living texture and terroir expressiveness.
Winery Story
Paraschos is a small estate in Gorizia (Friuli), founded by Evangelos Paraschos, a Greek-born winemaker in love with Friuli and its traditions. Evangelos is one of the pioneers of natural winemaking in the region, working biodynamically and resolutely refusing any additives. His wines have become a symbol of Friulian terroir minimalism.
Vineyard Story
Paraschos's vineyards lie on the hills of Collio near the Slovenian border — a zone with a unique blend of maritime and continental climate. 'Ponca' soils (alternating marl and sandstone) give the wine its characteristic minerality and salty finish. The vines are tended without synthetic chemistry, leaving a living imprint of place in every bottle.
