Vinification

Kai from Paraschos is a natural wine from Friulano, macerated on the skins for added structure and texture. Winemaking is done without intervention, with minimal or no sulfite use. The wine reflects Evangelos Paraschos's biodynamic approach to working with the Friulian terroir.

Winery Story

Paraschos is a small estate in Gorizia (Friuli), founded by the Greek-born Evangelos Paraschos, one of the pioneers of natural winemaking in the region. He has worked along biodynamic lines since the late 1990s, foregoing chemistry and technological intervention in favour of a living expression of the terroir. His wines have a distinctive character and are highly regarded among lovers of natural wine around the world.

Vineyard Story

Paraschos's vineyards lie on the Italy-Slovenia border in the Collio / Brda zone, on the limestone-flysch ('ponca') soils characteristic of the area. This unique terroir gives the wines a pronounced minerality and saltiness. Friulano here is the historical autochthonous grape, deeply tied to local culture and climate.
