Vinification
The Konde cuvée from Kabaj is a blend of autochthonous and classic white varieties of Goriška Brda, aged in oak barrels. The winemaking aims at preserving terroir character and minerality with a gentle oxidative ageing. By 2009 the wine has gained mature complexity while retaining freshness.
Winery Story
Kabaj is a family winery in Slovenia's Goriška Brda, run by French-born winemaker Jean-Michel Morel and his wife Katja Kabaj. The estate is known for its skin-macerated whites — partly fermented in buried qvevri — and patient, traditional reds released only when ready.
Vineyard Story
Goriška Brda is a hilly region in western Slovenia, bordering Italian Collio, with a mild Mediterranean climate and 'opoka' (ponca) soils. Kabaj's vineyards lie on well-drained slopes where clay-limestone soils lend the wines their characteristic minerality and structure. The favourable alternation of warmth and cool nights preserves high natural acidity.
