Vinification
Le Mazel works in a natural mode, intervening minimally in winemaking. The Chardonnay from the Ardèche is fermented spontaneously on wild yeasts and aged with little or no sulfur. The style points to an unfiltered, living wine with a terroir focus.
Winery Story
Le Mazel is the estate of Gérald and Jocelyne Oustric in the Ardèche, one of France's landmark natural-wine producers. They work without chemistry, with deep respect for the land and minimal cellar intervention, and have become a reference point for a generation of natural winemakers.
Vineyard Story
The vineyards lie in the granite and limestone foothills of the southern Ardèche, where cool nights and lean soils produce wines of pronounced minerality and freshness. The terroir of this area gives Chardonnay a tension and character atypical of warmer southern appellations.
