Vinification
The cuvée 'Les Parcelles' is an assemblage of several plots from Grand Cru Bouzy, aged mostly in old barrels. The Extra Brut style highlights natural acidity and terroir without excess sweetness. Lees ageing of at least three years gives the wine depth and autolytic complexity.
Winery Story
Maison Pierre Paillard is a family estate in Bouzy, one of Champagne's most prestigious Grand Crus, founded in 1768. Today it is run by the eighth generation of winemakers — brothers Antoine and Quentin Paillard, who focus on terroir-driven cuvées and minimal intervention. The estate is known for its fidelity to tradition and the high quality of its Bouzy Pinot Noir.
Vineyard Story
Bouzy is the only Champagne Grand Cru officially recognised for both red and white wines, with unique chalk soils rich in limestone. The vineyards lie on well-drained slopes that give Pinot Noir optimal exposure. The terroir lends the wines their characteristic minerality, red-fruit power and remarkable ageing potential.
