Vinification
The Les Parcelles Bouzy Grand Cru Extra Brut cuvée is made from individual plots in Grand Cru Bouzy with a Pinot Noir-dominated blend. Lees ageing brings depth and complexity, while the minimal extra-brut dosage preserves freshness and the terroir character. The vinification is geared towards a precise expression of the limestone Bouzy terroir.
Winery Story
Domaine Pierre Paillard is a family récoltant-manipulant in the village of Bouzy, run across several generations of the Paillard family. Brothers Antoine and Quentin Paillard place particular emphasis on a parcel-by-parcel approach and on expressing the Bouzy terroir — one of the few Grand Crus best known for Pinot Noir. The estate keeps to sustainable farming with a leaning towards an organic approach.
Vineyard Story
Bouzy is a prestigious Grand Cru in the Montagne de Reims region, historically celebrated for its Pinot Noir grown on chalk and limestone soils. Pierre Paillard's vineyards lie on various plots with their own microclimates, allowing wines of pronounced minerality and structure to be produced. The chalk subsoil provides excellent drainage and gives the wines their characteristic freshness.
