Vinification
Friulano is fermented in stainless steel with minimal intervention, preserving the variety's characteristic bitter-almond note and the bright minerality of the Colli Orientali terroir. Ageing on fine lees adds roundness and textural depth while keeping freshness. The style aims at varietal purity and a sense of place.
Winery Story
Ronco Severo is a small family estate in Prepotto, run by Stefano Novello. The vineyards lie on the slopes of the Colli Orientali del Friuli, and the estate's whole philosophy is built on minimal intervention in both vineyard and cellar. Stefano aims to make wines that reflect their terroir as precisely as possible.
Vineyard Story
Ronco Severo's vineyards lie on the limestone-marl ponca soils of the Colli Orientali del Friuli, which shape the characteristic minerality and precision of the wines. The microclimate is sheltered by mountains to the north and tempered by the Adriatic to the south, creating ideal conditions for slow ripening of Friulano while preserving natural acidity.
