Vinification
Friulano is fermented in stainless steel or old barrels, preserving varietal purity and freshness. Ronco Severo emphasises minimal intervention so that the terroir of Friuli-Venezia Giulia comes through. The style is dry and structured, with pronounced acidity and the variety's characteristic touch of bitter almond on the finish.
Winery Story
Ronco Severo is a small family estate in Prepotto, Friuli, founded by Stefano Novello. The winery keeps to organic farming and minimal cellar intervention, aiming to express the authentic character of the local varieties and terroir. The estate enjoys respect among natural-wine lovers in north-eastern Italy.
Vineyard Story
The vineyards lie on the hills of the Colli Orientali del Friuli — one of the most prestigious appellations of the region. The soils here are the characteristic mix of marl and sandstone of the Pontian period known as 'ponca', which gives the wines pronounced minerality and salinity. The microclimate is shaped by the influence of the Alps and the Adriatic, providing an optimal balance of warmth and freshness.
