Vinification
Malvasia from Ronco Severo — a small family estate in the Colli Orientali del Friuli — is usually vinified with an emphasis on varietal purity: fermentation with native yeasts and ageing primarily in stainless steel or neutral vessels to preserve aromatics. The style is delicate, aromatically rich, with a soft texture and freshness.
Winery Story
Ronco Severo is a small family estate in Prepotto (Colli Orientali del Friuli), founded by Stefano Novello. The winery holds to a minimalist approach in the cellar, striving for the most precise expression of local varieties and terroir. The estate is known for its commitment to traditional Friulian grapes — Malvasia, Friulano and Ribolla Gialla.
Vineyard Story
The vineyards lie on the hills of the Colli Orientali del Friuli — one of the most prestigious white-wine appellations of north-eastern Italy. The soils are predominantly the marl-sandstone 'ponca' that delivers the characteristic minerality and freshness. A moderate continental climate influenced by the Alps and the Adriatic creates ideal conditions for preserving aromatics and acidity.
