Vinification
Ribolla Gialla from Ronco Severo is a classic example of Friulian white winemaking aimed at preserving the variety's natural freshness and minerality. Fermentation takes place in stainless steel with minimal intervention, keeping bright acidity and aromatic purity. The style is geared towards drinkability and expressing the Colli Orientali terroir.
Winery Story
Ronco Severo is a small family estate in Prepotto, at the heart of Friuli, run by Stefano Novello. The estate works in line with principles of respect for the land and minimal cellar intervention. Ronco Severo's wines reflect a deep connection to the local terroir and to traditional Friulian varieties.
Vineyard Story
The vineyards lie on the hills of the Colli Orientali del Friuli on soils rich in clay and limestone, which give the wine its characteristic minerality. Ribolla Gialla is a historic grape of this region, perfectly adapted to the local climate with cool nights and warm days that shape an expressive acidity. The altitude and exposure of the vineyards ensure slow ripening and the preservation of aromatic freshness.
