Vinification
Thomas Pico works in a natural style with minimal intervention in winemaking. Fermentation runs on wild yeasts and ageing takes place mainly in neutral vessels to preserve the purity of the Chablis terroir. Sulfur use is kept to a minimum.

Thomas Pico is one of Chablis's best-known natural winemakers, founder of Domaine Pattes Loup. He works biodynamically and adheres to a philosophy of minimal intervention in both vineyard and cellar. His wines have become a benchmark of honest, terroir-driven Chablis among natural-wine circles.
Vineyard Story
The vineyards lie in the Chablis appellation on the famous Kimmeridgian limestone with fossil oyster shells, which give the wines their characteristic saline minerality. The unique cool continental climate provides high natural acidity and freshness. The Chablis terroir is regarded as one of the most expressive for Chardonnay in the world.
